Vietnamese cuisine is not much of grilled staff, but we do have various dishes featuring grilled pork. Whenever it comes to grilled, we usually grilled meat to flavor the steamed rice or rice noodles. Those we don’t include this dish tasting on our street eats Hanoi, we would love to show you our recipe to cook a Vietnamese chopped grilled pork with steamed rice.
INGREDIENTS
Rice & Garnish
- 3 cups of rice
- 4 eggs
- 1 large cucumber
- 1 large tomato
- 1 lettuce head
- 2 large tomatoes
- ½ cup of light olive oil
- 3 stalks of scallion
Chopped Pork
- 4 bone-in pork chops
- 3 tbsp fish sauce
- 2 tbsp olive oil
- 1 tbsp soy sauce
- 3 tbsp of sugar
- 3 cloves of shallots
- ½ stalk of lemongrass
- (or 2 tbsp of pre-minced lemongrass)
- 3 cloves of garlic
- 2 small knobs of ginger
- 2 Thai chili peppers
- ½ tsp black pepper
Dipping Sauce
- ¼ cup of sugar
- 2 tbsp of hot water
- ¼ cup of fish sauce
- ¼ cup of fresh lime juice
- ½ tbsp of chili paste
STEPS
- Cook 3 cups of rice. Mince 3 cloves of shallots, 1 stalk of lemongrass, 3 cloves of garlic, 2 small knobs of ginger, 2 Thai chili peppers. Chop 3 stalks of scallion. Slice the cucumber diagonally. Slice the tomato thinly. Set aside.
- In a small pan on low heat, mix 4 tbsp of fish sauce, 2 tbsp of olive oil, 1 tbsp of soy sauce, and 2 tbsp of sugar. Stir in the shallots, lemongrass, garlic, ginger, chili peppers, and ½ tsp of black pepper. Place the pork chops in a large resealable plastic bag. Pour the marinade in the bag and seal the bag. Let the pork marinate in the refrigerator for about 5 hours or overnight.
- In a small bowl, mix ¼ cup of sugar with hot water until the sugar dissolves. Stir in ¼ cup of fish sauce, 1/3 cup of lime juice, 2 Thai chili peppers, and ½ tbsp of chili paste. Set a side.
- In a small heated pan with oil, add the chopped scallions. Cook the scallions for 3 minutes on low heat until they are soft. Set a side, let cool, and pour both the oil and scallion into a small bow.
- Remove the pork chops from the refrigerator 30 minutes before cooking. Heat your grill to medium-high heat and grease the grates cooking spray.
- Grill the pork chops for 2 minutes on each side until slightly charred. Set aside. Place a few lettuce leaves on the plate. Add one pork chop atop the lettuce and pout a small spoonful of scallion oil over the pork chop. Add a few slices of cucumbers and tomatoes to the side. Enjoy!
